Ovens: Cleaning, Functions and Getting Good Results
Fan and conventional, pyrolytic cleaning, calibration and everyday use
Ovens vary in how they heat and in how they are cleaned, and both affect cooking more than the brand does.
Fan and conventional
A fan oven circulates air, cooks more evenly and allows several shelves at once. A conventional oven has heat from above and below with a hotter top, which suits some baking and roasting.
Recipes are usually written for conventional temperatures. Reduce by around twenty degrees for a fan oven, or check whether the recipe already accounts for it.
Your oven is probably not accurate
Domestic ovens are frequently out by twenty degrees or more, and have hot and cool areas. An inexpensive oven thermometer settles it, and it explains a great deal of inconsistent baking.
Rotate trays part way through, and learn where your oven runs hot.
Pyrolytic cleaning
The oven heats to around 500 degrees and reduces residue to ash. It is effective and uses a substantial amount of electricity, produces fumes, and the door and surroundings get extremely hot.
Remove the shelves and any non-pyrolytic accessories first, ventilate the kitchen thoroughly, and keep pets — birds in particular — well away, since the fumes can be fatal to them.
Catalytic liners and manual cleaning
Catalytic panels absorb grease during normal cooking and need replacing eventually. Otherwise, clean spills before they bake on, and use caustic oven cleaners with gloves, ventilation and care around skin and eyes.
Everyday use
Preheat properly, do not open the door repeatedly, and use the right shelf position, since that is where most recipes go wrong.
Buying an oven
Check the usable cavity volume and the shelf positions rather than the advertised capacity, and whether the door drops down or opens sideways, which matters in a narrow kitchen.
Compare the stated annual energy consumption, and check whether a pyrolytic cycle requires a particular circuit rating.
Small appliances
An air fryer or a microwave heats small quantities far more efficiently than a full-sized oven, which is a genuine saving for one or two people.
Everyday care
Wipe spills once the oven has cooled rather than letting them bake on repeatedly, and clean the door glass, since a clear door means fewer openings. Check and replace the door seal when it hardens.
Keep the manual, since fault codes are meaningless without it.
Cooking results
Use the shelf position the recipe specifies, preheat properly and avoid opening the door repeatedly, which drops the temperature sharply. A probe thermometer removes the guesswork on meat.
Line trays rather than the oven floor, since covering vents affects airflow.
Safety
Keep a fire blanket in the kitchen and never leave the oven unattended on a high grill setting.
