Air Fryers: What They Do and Using One Well
How they work, where they save, acrylamide and cleaning
An air fryer is a small convection oven with a powerful fan, and understanding that explains both what it does well and what it does not.
Why they work
A small enclosed space with fast-moving hot air heats quickly and cooks food from all sides, which produces a crisp surface with little or no oil. There is no frying involved.
The small cavity is the whole advantage — it preheats in minutes and uses considerably less energy than a full-sized oven for one or two portions.
Where they save
Cooking for one or two, reheating anything that should be crisp, and jobs that would otherwise mean heating a large oven. For a family roast, a conventional oven is still more efficient.
Work out the wattage and the time against your oven to see the actual saving, which is real but frequently overstated.
Using one well
Do not overfill the basket, since crowded food steams rather than crisps. Shake or turn halfway. A light spray of oil helps browning considerably.
Most recipes need a lower temperature and a shorter time than a conventional oven, commonly around twenty degrees lower.
Acrylamide
Cooking starchy foods at high temperatures forms acrylamide, which food safety bodies advise minimising. Aim for golden rather than dark brown when cooking chips, roast potatoes and toast.
Soaking chipped potatoes before cooking reduces it, and storing potatoes out of the fridge rather than in it helps too.
Safety and placement
Leave the manufacturer's stated clearance around and above it, since the exhaust is hot. Plug into a wall socket rather than an extension lead, and never line the basket with paper unless weighted by food.
What it replaces
For one or two people, an air fryer replaces the oven for most weekday cooking. It does not replace a hob, a grill for large quantities, or an oven for baking that needs even gentle heat.
Check the basket capacity in litres against what you actually cook, since advertised sizes assume nothing is layered.
Cleaning and coatings
Clean after every use before residue bakes on, and use nothing abrasive on a non-stick basket. Check whether the basket is dishwasher safe, since many coatings degrade in one.
Do not preheat empty on maximum, and stop using a basket once the coating is flaking.
Buying
Compare the usable basket capacity, the noise level, and whether it has a window or needs opening to check. A drawer that must be pulled out to see the food is a minor annoyance repeated daily.
Cleaning
Clean after each use before residue bakes on. Check whether the basket coating is non-stick, and use nothing abrasive on it.
