Brewing Methods Compared

Filter, cafetière, AeroPress and moka pot, grind and ratio, and choosing one

The brewing method changes a coffee more than most people expect, because each one extracts differently from the same beans.

Filter and pour over

Paper filters trap oils and fine particles, which gives a clean, bright cup that shows origin character. It suits lighter roasts and rewards a steady pour and an even bed.

A flat-bottomed brewer is more forgiving than a cone for beginners.

Cafetière

Full immersion with a metal mesh, so oils and some fines stay in the cup. Heavier body, less clarity, and almost no technique required, which is why it suits mornings.

Use a coarse grind, brew around four minutes, press gently and decant immediately rather than leaving it standing.

AeroPress

Short immersion under pressure through a paper filter, producing a concentrated, clean cup in under two minutes. It is forgiving, portable and easy to clean.

Moka pot

Steam pressure through a fine grind, giving a strong, syrupy cup. Use a medium-fine grind, take it off the heat as soon as it gurgles, and never tamp it.

Grind and ratio

Around 60 grams of coffee per litre of water is a useful starting ratio for filter methods. Sour and fast means grind finer; bitter and slow means grind coarser, which solves most problems.

A burr grinder matters more than any brewer.

Buying beans

Look for a roast date rather than a best before, buy small bags more often, and store them airtight, cool and dark rather than in the fridge. Grind immediately before brewing.

Ask the roaster which method a coffee was roasted for, since a light filter roast in a moka pot will disappoint.

Milk drinks

Steamed milk needs a darker, more soluble roast to come through. Whole milk froths most easily; oat milk formulated for baristas behaves closest to it.

Equipment worth buying

A burr grinder first, then scales that measure to a gram, then a kettle you can pour with. Those three improve a cup more than any brewer, and a cheap brewer with good grinding beats the reverse.

Clean equipment regularly, since stale coffee oils turn rancid and taint everything.

Caffeine

Caffeine has a half-life of around five hours, so an afternoon cup affects sleep for many people. Decaffeinated coffee has improved enormously.

Subscriptions

A roaster subscription delivers close to the roast date, which is the single biggest factor in how coffee tastes. Check how far ahead you must skip a delivery and whether it renews automatically.

Ask for variety rather than the same bag, which is how you learn what you like.

Water

Coffee is overwhelmingly water. A filter jug improves the cup noticeably in a hard water area.
